Day Eight: I Can Tell We'll Be Spending A Lot Of Time In The Kitchen

Well, I managed to cook breakfast, and lunch, and have two snacks, and dinner is now in the works. Everyone mentioned the amount of food prep time, and it's no lie. My husband is a sweetheart and is sharing PCP meals with me--even refusing to add salt and olive oil or butter to dishes that would clearly be improved by them. I love that we're together in kitchen slavery, but it's also twice the chopping. Anyone get carpal tunnel yet?

The plan was to cook for the whole week today, but I'm not that sure of portion size yet. So I'll make enough at dinner for lunch the next day, and see where we are at the end of the week. Ideas and strategies humbly solicited from those with more experience. Tell us your best tricks!

  1. Yes, cooking ahead is good, but not too far ahead. I think I would waste a lot of food if I cooked for an entire week. :)

    If I'm making some chicken or shrimp, I just make way more than I'm going to need at my next meal and then I've got some extra for later. You can always be hard-boiling some eggs, as long as you're somewhere at home.

    Your husband IS really sweet to be doing PCP food with you. My husband and I have had some battles over shared meals, and for the time being, we're just not sharing them. Hoping that'll get better as I transition back into the real world, with better habits of course!

  2. I went untill now with steam vegi, for the vegi portions. So I prepare about 2-3 days ahead, i boil the egg also for 3-4 days ahead as well.

  3. That's awesome that your husband is supporting you like that!

    I was a prep cook before and have a lot of experience cutting massive amounts of veggies. Carpal tunnel is not something you want ever. The key is a really sharp chef's knife and letting the knife do the work. The cutting should be effortless. Everyone thinks that you have to cut fast because they see cooks chopping at light speed, but for the home cook just try and keep it slow and steady (so you don't cut your hand). Once you improve your knife skills it actually becomes pretty fun.
